How To Make Carrot Cake

Miffy loves the smell of carrot cake fresh from the oven, and she loves the taste too! Aunt Alice taught Miffy to make carrot cake, and now Miffy is going to teach you!

Easy Carrot Cake Recipe:

  • 250g of self-raising flour
  • 500g of caster sugar
  • 350ml of vegetable oil
  • 4 eggs
  • 130g of walnuts
  • 2 teaspoons of cinnamon
  • 350g of grated carrots

Carrot Cake Icing:

  • 225g cream cheese
  • 100g margarine
  • 450g icing sugar
  • 120g walnuts
  • 1 teaspoon vanilla

Carrot cake is a really simple recipe although it has a handful of ingredients, so Miffy likes to be organised by checking first if she has everything she needs – it's much better to pop to the shops to get a missing ingredient before you start baking! Then, another handy tip is that Miffy weighs out all the items (with a little bit of help from Aunt Alice) and sets them to one side so they are ready to use just when she needs them.

Before You Start...

Miffy always asks Aunt Alice to help her make things, as it's not safe for her to use the oven without someone there to make sure she's safe. Make sure you bake with a parent to keep an eye on you - they can help you reach all the things up high, as well as handle anything toasty! Miffy likes to wear an apron when she bakes to stop spills and mess getting on her clothes – so that might be a good idea for you too.

Follow These Simple Steps...

STEP 1 - First, Miffy starts with carrots. Miffy likes to grow her own carrots, as you probably know from miffy's garden! So when they're fully grown, Miffy goes into the garden and pulls them from the ground. Then she cleans them under the tap to make sure they're safe to eat, and then grates them on to a board. You can grow your own carrots if you like, but if you don't have any but want to make carrot cake, then store-bought grated carrots will do just as well.

STEP 2 - Aunt Alice turns the oven to 180 degrees so that it will be hot enough to cook everything! Make sure that your parents do this as it's not safe for little girls and boys to use ovens!

STEP 3 - Miffy uses margarine on some kitchen roll to coat two large cake tins so that when the cake is baked she'll be able to get it out without too much kerfuffle.

STEP 4 - Once this is done Miffy weighs out the flour, sugar and a pinch of the cinnamon, and then mixes them together and stirs. Once this is all done, she adds in the carrots and nuts…. Yum!

STEP 5 - When these are all mixed together, Miffy splits the mixture between the two greased tins. Aunt Alice puts it in the oven with a timer and then takes it out for Miffy 30 minutes later

STEP 6 - Miffy then mixes together the butter, cream cheese, and sugar until it is all lovely and smooth. She adds some vanilla extract and the walnuts, and using a butter knife, spread the mixture on to both of the cakes and then sandwiches them together.

STEP 7 - Miffy asks Aunt Alice to cut a slice of carrot cake and has it with her tea…. Mmmm!

Miffy's Top Baking Tips

The oven is hot! - The oven is hot and Miffy doesn't want you to get burnt hands! An adult should always be the one to use the oven.

Wear an apron - When you're making carrot cake you should use an apron to stop spills and mess getting on to your clothes. You can buy a handy Miffy children's apron, if this is what you were hoping for.

Cake dough - Cake dough might taste good, but you should never eat raw egg. Wait until it's cooked so that it's tasty and safe!
