Strawberry Filled Miffy Cookies

Miffy loves to bake! Look what she's made! Strawberry filled cookies! Miffy filled them with strawberry icing because that's her favourite flavour, but you can make chocolate or even banana filling by replacing the strawberries in the ingredients. (You'll need an adult to help you with this recipe!)

  • Produces: 40 double sandwich cookies

Are you ready? Go, go, go!

Strawberry Filled Cookies Ingredients:

  • 125ml water
  • 500g flour
  • 1 tsp baking powder
  • 200g granulated sugar
  • 200g salted butter
  • Miffy Shaped Cookie cutter
  • 200g strawberries (washed, with their leaves cut off & ask an adult to use the knife for you!)
  • 200g butter for the strawberry filling (left to warm up to room temperature).
  • 150g icing sugar

Let's Get Baking!

Step 1:

To prepare the cookie dough, place 200g of butter, the granulated sugar, and water in a medium-sized saucepan, and melt. (Ask an adult to do this part!) Stir the mixture until you have a smooth consistency and then take the saucepan off the heat to cool.

Step 2:

After the mixture has cooled, add the flour and baking powder and stir until combined with the other ingredients. Time to get messy!

Try a children's apron to keep clothes and your little ones clean and tidy.

Make two balls out of the dough with your hands and wrap them in cling film to leave in the fridge for at least 3 hours.

Step 3:

Ask an adult to Preheat the oven to 350º F (180 ºC). Then, cover your work surface with flour, and roll the dough until it's really thin! (Max. 3 mm). Using your Miffy cookie cutter, cut out your Miffy shapes really carefully. (Ask an adult to help you so they don't go funny!) Place your Miffy cookies on a baking tray lined with paper parchment.

Step 4:

Pssst! Want to know a secret? If you put your Miffy cookies in the fridge to chill for 15 minutes before cooking, they won't change their cute shape in the oven!

Step 5:

Bake! Leave your Miffy cookies in the oven for 8-10 minutes.

Watch the oven carefully! When the little Miffy's ears and edges start to turn golden, they are ready to come out! Ask an adult to take them out when they're done so they can cool on a rack. Don't touch them yet! They're still very hot!

Step 6:

Make the buttercream while you're waiting for the cookies to cool down!

Ask an adult to put the strawberries in a food processor to process until they're pureed. (If you want to use chocolate, then you can skip this step and add cocoa powder or melted chocolate instead!)

Step 7:

Beat together the butter and icing sugar until the mixture is light and fluffy! Slowly add the strawberry puree, (or your alternate flavouring), and mix it all together gradually until well blended. If you need to make it thicker then add more sugar!

Step 8:

Fill a piping bag with your buttercream and cover the underside of one of your Miffy cookies. Don't put buttercream on her face, silly! Once, you're done, place another Miffy cookie on top so it makes a sandwich. Yummy! Do this for all the cookies and they're ready to eat!

If you fill up on cookies but there is still some left, you can store them in the fridge in an airtight container so you can eat them later or take them to school to share with your friends!
